Tapioca Pudding Drives Me Nuts...

Did anyone know that tapioca pudding takes 2 whole days to make? Not I! What a hassle.

When I was a little girl I used to hate tapioca pudding. I used to think that the little round thingys were fish eyes. BLARGGGGHHH! YUCK! But... age and wisdom took over... and of course something in my brain decided that I liked it. Really cold is the best!

My recommendation is...... Don't ever make it homemade if your patience isn't fully intact! Ya have ta soak the lil eyeball thingys overnight... then the next day... ya have ta cook it in milk in a double boiler...(which mine was not quite big enough)... then ya have to separate eggs.... (I hate any recipe that you have to do that to)... I just about passed out from boredom trying to get the dumb stuff done.... and finally after my elbow almost fell off from constant stirring for 15 minutes.......................It was almost done....... then of course....... beating the egg whites while you were constantly stirring took the talent of an octopus..... then.... a quarter cup ata time I added the hot eyeball thingys to the egg whites.......... ((yawn)).... then..... to get it really cold...... ya had ta wait another whole day!

I have come to the conclusion that if I am desiring tapioca pudding... I will trot myself down to the store and buy a container of it already made... and already cold.

Just thought I would share all that with ya.

I was ABOUT to say...Isn't it just easier to rely on the "Jell-o" pudding people? They do all the hard work for you and all you have to do is peel off the sticky lid (which has to be licked clean--that's soooo hard!) and enjoy!
BTW, I remember you thinking they were fish eyeballs. Because of that, I didn't eat it until the last five years!
